Pot Roast Sautéed and Cooked in Instant Pot

I tried to do a video of my first  pot Roast Sautéed and Cooked in instant pot  while I was coming down with a terrible cold and unknowingly had a fever. A total train wreck. The Video I have to warn you, this is the crappiest video I have made . Watch at your own risk. Even my voice-over is me croaking like a poisoned toad. Ugh! At least it is short. Many people have been asking me to do instant pot  videos and I did not want to let them down. The “Technique” First, I went a little crazy over-seasoning the eye of round roast which ended up not being a good choice of cuts for the  instant pot . (I blame the fever.)  More of a slow-cooker cut of meat. I also used Rachael Ray’s chicken broth (did not have beef) which has way more salt than the kind I normally use. So yes, it was all too salty. I really wanted to try the browning feature of the  instant pot  which separates itself from other pressure cookers. I choose “Sauté” and after a few minutes the  instant pot  says “Hot” and you can then brown the meat. I added some oil, let it heat up and then browned the roast on all sides. I added a cup and a half or so of broth, closed the lid and set the  instant pot  on to manual mode for 60 minutes. The “Challenges” See the steam coming out? I hope so.   More on that later in the week… Right now we have round three of “let’s record some random cooking vlogs and hope people enjoy them”. If you haven’t been following the show…today I am going to share an instant pot recipe with you! For those of you who don’t know, the instant pot  is a 7 in 1 multicooker that is a: pressure cooker, slow cooker, rice cooker, saute-er, yogurt maker, steamer and warmer.  I bought an instant pot last spring when my crockpot bit the dust.  I had never used a pressure cooker before, but am amazed at how much I use it now.  There is rarely a meal that is cooked in my house where the instant pot isn’t involved.   One of my greatest resources for learning how to cook in the instant pot has been Jill Nussinow’s book – The New Fast Food.  Jill, also known as “The Veggie Queen”, has written an extensive book detailing how to use a pressure cooker.  She includes cooking chart, trouble shooting, and many other amazing resources…and that’s all before you get to the recipes.  Jill’s recipes are all healthy, plant based meals that are spot on, and they make you a pressure cooking pro.  I highly recommend her book!  The best part is you can get it in e-book form – which means you can download it right away!  Click here to visit The Veggie Queen. Review: Instant Pot Silicone Mitts

When I first saw them, I thought “why would I bother with those tiny things”? Side note: The new instant pot IP-Smart pressure cooker is the same machine as my favorite pressure cooker, the instant pot Duo . The IP-Smart adds a bluetooth connection, a smartphone app, a fancy blue backlight on the redesigned display, and a few extra program modes. If money is no object, or you really love the idea of directing your pressure cooker from your phone, it’s an excellent pressure cooker, every bit as good as the IP-DUO. But, I can’t recommend it at double the price of the IP-Duo. You wind up paying a huge premium for bluetooth connectivity. Now that I’m using the mini mitts, they don’t seem tiny; they’re perfectly sized. They are a silicone version of the pinch potholders I have come to love. They make it easy to grab the pot liner lip that sticks out of the pressure cooker body, and the waterproof silicone means I don’t worry about hot liquid seeping into the holder if I accidentally dip my finger in the hot liquid in the pot. Now I use these mitts all over the kitchen. The only time the smaller size was a problem was a careless grab of my cast iron skillet. I choked up on the heavy skillet, and the handle reached past the edge of the mitt and up to the bare skin on my wrist. “Branding Iron Hot” is not a euph …
